Why atlantic salmon?

Steve has spent 17 years working at the hatchery, putting in countless hours of experience with many types of fish. Steve's choice of ONLY using Atlantic salmon is due to the fact that they get the best food with fantastic biologists on hand and most importantly, these fish are proven to have one of the highest counts of Omega 3 Oils.  

How steve does it

Steve does not brine his salmon, but uses a dry rub method of spices that leaves the fish tasting perfectly balanced. The dry rub method enables enough flavor into the salmon without being too salty or over seasoned.
